Simnel cake recipe

Pre-heat the oven to 140 degrees C.

Cream together 12oz butter, 9oz dark brown sugar and 3oz caster sugar. Beat in 6 eggs. Mix in 12oz flour, a good pinch of salt, a heaped tea-spoon of nutmeg and a heaped tea-spoon of cinnamon. Add 24oz of mixed fruit, 4oz of candied peel and a good dash of lemon juice.

Grease and line a 9″ cake tin and pour in the mixture. Bake until a wooden skewer, when pushed into the centre of the cake, comes out just clean.
